All coffees are acidic, despite some claims of “acid free acid coffee”. When reviewing the degree of acidity of coffee, the pH scale is an appropriate measure, as coffees can be compared one against another. Pure water has a pH of 7.0 and numbers below that are acidic and numbers above that alkaline. HealthWise has a tested pH of 6.18. The pH scale is logarithmic, such that each whole number difference is 10 times more or less acidic than the other number. For example, a coffee with a pH of 5.18 is 10 times more acidic than HealthWise. The unroasted coffee bean has a pH of 5.0 and most coffees have a pH of 5.0 to 5.8 according to our study.
